Aunt Peggy's Cucumber, Tomato and Onion Salad

2 large cucumbers, peeled and thinly sliced
1  pint cherry tomatoes, halved
1/2 sweet onion, thinly sliced
2 Tablespoons chopped parsley leaves
2 Tablespoons apple cider vinegar
2 Tablespoons olive oil
Salt & Pepper

Toss cucumbers, tomatoes and onion together in a large bowl.
Mix all other ingredients.
Taste and add more salt and pepper if necessary.

Refrigerate at least 10 minutes but better if left for extended time.



We really liked this one.  Easy to throw together and it tastes really fresh.
